Esta receta es de las cosas simples, rápidas y ricas que nos pueden servir para almorzar o también para llenar el vacío de hambre a media tarde. Con unas pocas cosas del refrigerador quedamos bien llenos, disfrutando el gusto exquisito que tienen estas quesadillas de sartén. Pongan atención a la receta, para que tengan los ingredientes en su lista de compras. Acá los niños corren felices a la cocina cuando llegan del colegio y sienten el olor!

   This recipe is one of those simple, quick and delicious things we can have for lunch or for filling the void of hunger in midafternoon. With a few things from the fridge we're well filled, enjoying the exquisite taste that these quesadillas on the pan have. Pay attention to the recipe, so you have the ingredients on your shopping list. Here the kids run happy to the kitchen when they get home from school and they sense their smell!

   Empecemos por la verdulería: generalmente vamos a tener las cosas que queremos comer dentro de la semana, pero que nunca falten:

   Let's start with the greengrocer's: usually are going to have the things we want to eat within a week, but never missing:

- limones o limas / lemons or limes

- pimentón / pepper

- cebolla / onion

- zanahoria / carrots

- apio / celery

- naranjas / oranges

   Todas estas cosas son la base para preparaciones y aliños, no sea que tengamos todos los ingredientes menos estos! No se olviden que pueden hacer su propio apio para cocinar, como les enseñamos y siempre aprovechen las frutas y verduras locales y de la estación, son las más ricas.

   All these things are the basis for preparations and dressings, lest we have all ingredients except these! Don't forget you can make your own celery for cooking, as we taught you and always take advantage of local fruits and vegetables in season, they are the nicest.

   Otros infaltables: / Other must haves

- leche: descremada y semi descremada / milk: no fat and low fat

- un pan de mantequilla: con sal, un poquito hace bien / a box of butter: with salt, a little is fine

- yoghurt: ojalá natural, porque sirve para cocinar reemplazando la crema en casi todas las cosas y también en repostería. Pueden hacer en la casa con la técnica que les mostramos o con una yoghurtera. / yoghurt: hopefully not flavored, because it's good for replacing cream to cook almost everything and also in baking. Can make it at home with the technique that we show or with a yoghurt maker.

- queso: me lo había saltado y lo estoy agregando, porque no se puede vivir sin queso. Tiene que haber parmesano sí o sí, además de alguno de tipo suizo y otro mantecoso, salvan cualquier comida y sirven también para el hambre de media mañana, quedan bien con mermeladas y con cualquier verdura. Podemos añadir alguno de cabra también? / cheese: we must have some parmesan, also a kind of swiss an a soft one, they save any meal and is good for our morning cravings, goes well with jam and any vegetable. Can we add goat cheese too?

- pan: aunque hay quienes prefieren guardarlo afuera, en el refrigerador dura mucho más y un poco de tostador u horno lo hacen quedar como del día. Hay que ponerlo dentro de una bolsa plástica, para que el refrigerador no le quite la humedad. / bread: although some prefer to keep it outside in the refrigerator, it lasts much longer and a little toaster or oven make it look like fresh. You have to put it in a plastic bag, so the refrigerator doesn't take the moisture.

- huevos: prefieran los más grandes, ojalá de campo. Guárdenlos fuera del refrigerador, para que al batirlos hagan más volumen. Duran cuatro semanas, pero si no saben bien de cuándo son, probablemente sea más seguro refrigerarlos. / eggs: prefer the larger country ones hopefully. Keep them out of the refrigerator, so that they get volume when beaten. They last four weeks, but if you are not sure of their date, they are probably safer refrigerated.

- vino: sí, para la cocina necesitamos vino. No tiene para qué ser elegante, lo mejor es buscar un formato que nos acomode para que no se eche a perder. Acá traemos packs de cuatro botellas chicas, esa medida es casi perfecta. Si sobra, se guarda en el refrigerador para la próxima vez. / wine: yes, we need wine for cooking. It doesn't have to be elegant, it's best to find a format that suits us to avoid spoil. Here we bring packs of four little bottles, that measure is almost perfect. If we have left overs, we store them in the refrigerator, for the next time.

   En la sección de congelados: / Frozen section:

-pasta: siempre guardemos pasta fresca congelada suficiente para una comida, nunca sabemos quién puede venir de visita y son una alternativa fácil y rica. / pasta: always keep enough frozen fresh pasta for a meal, you never know who may come to visit and they are an easy and nice alternative.

- tocino: guardar unas hojas de tocino es la mejor idea para dar ese gusto a ahumado delicioso sin tanta grasa, sólo vamos cortando un poco cada vez que necesitemos con un  cuchillo afilado y guardamos el resto. / bacon: save some sheets of bacon frozen is the best idea to give that delicious smoky taste without all the fat, we cut just a little every time we need with a sharp knife and keep the rest.

- carnes: carnes magras molidas, pollo previamente trozado en pedazos pequeños, para que no sea un problema descongelar. Lo mismo con los pescados y mariscos. Cuando vienen congelados envasados son más fáciles de separar, aunque pueden ser un poco más caros. Tomarnos un tiempo para hacer porciones cuando traemos las cosas a la casa es un gran avance para después. / meats: ground lean meats, chicken previously chopped into small pieces, so defrosting is not a problem. Same with seafood. When they come frozen in the package they are easier to separate, but can be a little more expensive. Taking time to make portions when we bring things home is a big step forward for later.

- choclo o maíz congelado: prefiero el dulce y tierno, pero puede ser cualquiera, se cuece una bolsa entera, previamente pinchada, en sólo cinco minutos de microondas! Con yoghurt, sal y estragón, es una delicia. / frozen corn: I prefer the sweet and tender, cook a whole bag, previously punched, in microwave just for five minutes! With yoghurt, salt and tarragon, is a delight.

- arvejas: sirven para sopas y guisos, también para mezclar en el puré y en una ensalada con menta. También se cuecen en la bolsa pinchada dentro del microondas, pero hay que bañarlas en agua fría después. / peas: good for soups and stews, also for mixing in mashed potatoes and in a salad with mint. Also cooked in the punched bag, in the microwave, but you have to dip them in cold water afterwards.

- albahaca: congelemos ahora albahaca para tener el verano guardado en el freezer todo el año! / basil: we freeze basil now, to have summer saved in the freezer all year long!

- berries: una bolsa de berries en el freezer es lo mejor. Sirve como un postre en sí, para hacer salsas y mermeladas, postres, tortas, lo que sea que necesitemos rápido. / berries: a bag of berries in the freezer is the best. It's awesome  as a dessert, for sauces and jams, desserts, cakes, whatever you need to make fast.
